There is nothing better than walking down into the kitchen and being immediately hit with the aroma of risotto in the making. In my house, we have made many different versions such as carbonara risotto, spaghetti risotto, mushroom risotto, carnitas and jalapeno risotto, and saffron risotto. My grandma learned how to make this from her mom, and she has passed it down to me and my family. This Italian rice dish is one of the most versatile dishes out there. Risotto is a classic dish in many Italian families and usually includes some type of broth, Arborio rice, parmesan cheese, onion, and white wine. In addition to these ingredients, you can customize the dish to your liking. This is a recipe you can get creative with! Here’s a recipe to test out:

  1. Saute chopped sweet onion in a bit of olive oil, salt, and butter until soft

  2. Add Arborio rice and saute for a few minutes

  3. Add a glass of white wine. Cook on medium heat; until liquid reduces by half (cooking off alcohol)

  4. Add warm chicken broth (one ladle at a time) stirring constantly over medium heat – low heat until mostly absorbed
