- Prep your ingredients by chopping the onions and zucchini into a uniform size. Mince garlic finely.
- Add olive oil to large pot on medium heat and add onions. Cook for 5 minutes.
- Add garlic. Cook with onions until soft and fragrant.
- Add chopped zucchini, 1/2 cup water and bouillon cube to pot. Mix to incorporate.
- Cook on low heat and stir often. After about 4 hours zucchini should be falling apart and mushy.
- Add cooked pasta to sauce and stir until combined.
- Season with salt, pepper and parmesan. Serve and enjoy!
