We all know somebody who has important dietary restrictions they need to adhere to. Whether it’s a personal choice or because certain ingredients don’t agree with their body, some traditional ingredients—especially when it comes to baking—need to be eliminated from their food intake.
Too many times, I’ve seen people forced to skip dessert because the ingredients contained something they couldn’t eat.
Friends don’t let friends skip dessert, especially when a few tweaks to the traditional recipe can make it more inclusive. These cinnamon sugar cookies were created with my vegan and lactose intolerant friends in mind, so put on your apron and let this recipe change your cookie game forever.
Vegan Cinnamon Sugar Cookies
Ingredients
Instructions
Preheat oven to 350° F.
In a large mixing bowl, add the sugar and vegan butter or margarine. For this recipe, I used Becel’s vegan margarine.
Cream the sugar and margarine together.
Add the non-dairy milk and vanilla. For this recipe, I used Silk’s vanilla soy milk. Gently mix the ingredients together.
In the same bowl, add the flour, baking soda, and baking powder.
Combine the ingredients. The mixture may look dry at first, but do not add additional liquids. Keep mixing and it will come together to form a dough.
#SpoonTip: This is a great base recipe. From this step forward it will turn into a cinnamon sugar cookie, but if you aren’t a fan of cinnamon sugar you can incorporate other ingredients to suit your taste.
On a separate plate, combine the cinnamon and additional sugar.
Roll the dough into small individual balls. You can vary the size depending on how big you like your cookies, but 1.5u0022 is standard.
Roll the dough balls in the cinnamon sugar mixture.
Place your dough balls on a cookie sheet and bake for 14 minutes. Allow the cookies to cool before enjoying!
These vegan cinnamon sugar cookies are chewy, moist, and delicious. What I like best about these cookies is that the majority of the people in my life are able to eat them. They were a hit with my meat-loving brother, my lactose intolerant dad, and my vegan boss.
If you’re looking for an easy and inclusive recipe for your next potluck, be sure to give these cookies a try.
