These Summer Rice Paper Rolls Will Keep You From Getting Hangry

Whether we want to admit it or not, every time summer comes around, we vow to say goodbye to In-n-Out, and hello to fruit, veggies, and the latest detoxing juice. Heck we even promise ourselves to not eat carbs.

But truth be told, this probably lasts a few weeks or so, if not less, because we usually end up feeling deprived and haaaaangry. And who likes a hangry person? No one/

So why am I here? Well it just so happens that I’m here to give you a bomb recipe that comes together in a flash, is light, satisfying, nutrient packed, and so healthy you’ll feel like your summer goals are still intact, because they are.

Introducing: summer rice paper rolls. No, not the ones that are filled with eggs and deep fried. The ones that are light, fresh, and wrapped with rice paper. Wrap-able carbs? I’m so in. And you will too once you make this.

    Place room temperature water in a plate and gently soak rice paper for about 10 seconds or until it’s soft but pliable.

    Place softened rice paper in a cutting board and place spinach leaves, noodles, mango, and avocado.

    Roll it once, tucking the ingredients to the end. Then fold in the sides and continue rolling. Serve chilled with peanut sauce.
