How to Make a Chopped Veggie Pasta Salad in 20 Minutes

With summer just around the corner, this pasta salad is the perfect summertime meal and only takes less than 20 minutes to make. I like to prepare it in the morning, so when I come home from a long day of tanning I have a pre-made meal. Just add a glass (or a bottle) of white wine and you are set for the perfect evening.

Cook Time: 15 minutes
Total Time: 15 minutes

Servings: 4-6

Ingredients:
1 Trader Joe’s healthy 8 chopped veggie mix
1 box of gluten free pasta
2-3 tablespoons olive oil
1 teaspoon lemon pepper
Salt to taste

Directions:
1. Pour one to two tablespoons olive oil in pan. Add the container of 8 chopped veggie mix and cook on medium heat.

2. Boil water in pot, then add box of pasta. Cook for about 10 minutes.

3. Drain and rinse pasta.

4. Add pasta and veggies to a large mixing bowl and add one tablespoon of olive oil to the mix.

5. Add one teaspoon of lemon pepper and salt to taste.

The hardest step of this recipe is putting it in the fridge to chill. After I’m done making it, I eat half of it right out of the mixing bowl. Bon Appétit!
