How to Make Flourless Peanut Butter Oatmeal Chocolate Chip Cookies

This article is written by a student writer from the Spoon University at Oklahoma chapter.

For all of you peanut butter lovers, I have a treat for you. Desserts can ring in the calories and sugar, so I decided to make this healthier cookie. It has no dairy, added sugar, or flour.

To make these flourless chocolate chip cookies with peanut butter and oatmeal as clean as possible, I recommend using pure maple syrup and a natural peanut butter with minimal ingredients. If you want to make them gluten-free, buy gluten-free rolled oats instead of the original kind.

Instructions

  1. Kathryn Ward

Set oven to 350°F. Mix all wet ingredients in a bowl (peanut butter, maple syrup, eggs, and vanilla extract).

  2. Kathryn Ward

In a separate bowl mix together all of the dry ingredients (oats, baking powder, and sea salt). Add and mix into the wet mixture, then fold in the chocolate chips. Don’t freak out when your dough is watery. Since this recipe doesn’t include flour, it will be different than the consistency of regular cookies, but it will still turn out delicious.

  3. Kathryn Ward

Scoop tablespoon-sized balls of dough onto a baking sheet and pop them in the oven for 10 minutes. If you want to make your cookies bigger, they may need more cooking time depending on how big you make them.

Make sure they are cooked through before taking them out. Let them cool to your liking and enjoy!
