It’s finally May, which means summer—a glorious stretch of sunshine, good books and flavorful food—is constantly on my mind. The best part of summer is trying out new recipes. Nothing beats cooking fresh, wholesome dishes filled with ingredients like ripe fruit, herbs, citrus and, of course, seafood. Everyone needs a good summer seafood dish in their lives.
With all of these bright flavors in mind, I decided to do a little pre-summer cooking, and this sweet and spicy dish was born. Bursting with tropical vibes, this spicy shrimp and mango salsa will send you on a mouthwatering summer getaway.
Mango Salsa

Mix salsa ingredients together in a large bowl. Season to taste with salt and freshly-ground black pepper.
Spicy Shrimp

Mix together salt, thyme, oregano, cayenne pepper, paprika, black pepper and fennel seeds.
In a large bowl, toss shrimp with spice mixture until all pieces of shrimp are evenly coated. Set aside to marinate for a few minutes while you prepare the mango salsa and begin to cook quinoa or your favorite grain blend, according to package instructions.
Heat a heavy large skillet over medium heat. Add oil and swirl to coat. Spread shrimp evenly throughout skillet and cook, stirring often and flipping shrimp halfway through, until pink and just cooked through, about 4 minutes.
Spoon hot shrimp over quinoa, add a scoop of salsa and dig in.
