With the Thanksgiving season just ending and the rest of the holidays approaching, this is the perfect bread to share with friends and family. It is also great for using up those leftover cranberries from the Thanksgiving season. The bread is paleo which means that it is gluten-free, dairy-free, and processed sugar-free!
I know what you thinking…how does this bread even taste good!? The tartness of the cranberries compliments the light citrus taste of the oranges and the sweetness from the maple syrup or honey. With finals right around the corner, this bread is a minimal effort that you can quickly mix up and toss into the oven.
Paleo Cranberry Orange Bread
Ingredients
Instructions
Line a large bread or loaf pan with parchment paper and preheat the oven to 350 F.
In a large bowl, mix all the dry ingredients together.
In another large bowl, mix all the wet ingredients together.
Slowly combine the wet ingredients with the dry ingredients. Don’t over mix!
Fold in cranberries and orange zest. This is where you would fold in additional add-ins.
Pour the batter into the pan. Sprinkle some fresh cranberries on top. This is where you would add the crumble if you want.
Bake for about 50 minutes until the loaf is cooked all the way through. Check with a toothpick to see if the loaf is done (toothpick should come out clean).
Cool and enjoy!
Changing It Up
I don’t know about you, but I struggle to follow any recipe. I always love adding and changing the recipe to what I feel that day. For this recipe, there are so many possibilities!
Try These Options:
– Switch out cranberries for blueberries
– Add around 1/4 cup of raisin or chopped nuts to the batter
– Create a crumble with oats for the top
– Make it vegan by replacing the eggs with a vegan egg substitute
– Make them into muffins for easy sharing
