Leftover Cheesy Mashed Potato Pancakes

Place mashed potatoes, cheese, scallions, and chopped bacon in a bowl and mix together until well combined.
Add 1 egg and 2 tablespoons of flour to the mixture and mix together until fully combined.
Create 8-10 patties out of mashed potato mixture.
Using the remaining flour, coat each patty.
Heat between 2-4 tablespoons of oil over medium heat and fry potato patties for 4 minutes each side or until golden brown.
Remove potato pancakes from heat and stack on plate.
Serve with dollop of sour cream and freshly chopped scallions.
