How to Make Vegetarian Sliders With Mango Coleslaw

This article is written by a student writer from the Spoon University at New Paltz chapter.

Vegetarians, rejoice! The world of boring microwave meals and black bean burgers is over. Whether you’re a new vegetarian, or a veteran, you can never have too many interesting recipes. Stop eating the same recipes over and over again. Try something different.

This dish is perfect for college students, or just for a quick and easy dinner. These vegetarian “fish” sliders show that healthy food can be delicious. The bright, orange mango and soft, purple onions in contrast to the dark greens of the cabbage and cilantro make for a dish that’s almost too beautiful to eat… almost.
