Two Healthy and Scrumptious Ways to Eat Pie for Breakfast

As the leaves begin to fall and the intense summer humidity finally subsides, the season of sweaters and thanksgiving and everything pumpkin spice is upon us. 

While I love fall for many reasons, pie is definitely at the top of the list. Nothing says fall like cozying up with a big slice of pumpkin pie (or two).

Unfortunately, eating copious amounts of pie everyday of the fall would probably result in a few too many layers of “insulation” (read blubber) by the time winter rolled around, so I decided to figure out how to infuse my fall days with as much pie inspiration as possible. Step one in this journey was to figure out how to have pie for breakfast.

After some recipe experimentation, I created 2 extremely satisfying – and healthy – vegan pie-themed breakfasts to get me out of bed in the morning (and dream about pie for breakfast the night before). 

Pumpkin Pie Overnight Oats

    Combine all ingredients in a jar. Mix well.

    Seal the jar and put it in the fridge overnight.

Apple Pie Overnight Oats

    Combine everything but the ½ apple in a jar. Mix well.

    Seal the jar and put it in the fridge overnight.

    Step 3: Once you remove the oats from the fridge, grate or chop apple and stir it in.
