The peanut butter cookie is a classic – and for good reason. With so many possible variations (flourless, chocolate-dipped or oatmeal, just to name a few), there really isn’t anything a perfect peanut butter cookie can’t do. We all know it is entirely possible to eat an entire batch of peanut butter cookies in one sitting, but here is a recipe for times when just one will do the trick. This recipe is quick to make and uses only one bowl.
Plus, since this recipe is egg-free, there’s really no need to cook the dough. Once you taste it, you might not be able to wait the 10 minutes for the cookie to bake. Try mixing the raw dough into chocolate ice cream or just let it take the quickest route from the mixing bowl to your mouth.

Ingredients:
2 tablespoons all-purpose flour
1/16 teaspoons baking soda
Pinch of salt
3/4 tablespoons white sugar
3/4 tablespoons brown sugar
1.5 tablespoons peanut butter
1/4 teaspoons vanilla extract
1 teaspoon applesauce
1 tablespoon chocolate chips (optional)
Directions:
1. Preheat the oven to 350oF.
2. In a small bowl, mix the dry ingredients.
3. Add the peanut butter, vanilla extract, applesauce, and chocolate chips, and mix well.
4. Roll the dough into a ball and flatten on a cookie sheet.
5. Bake for 8-10 minutes. Let cool and enjoy.
