Chia seeds, the super food everyone is becoming obsessed with, are the solution. Their absorption properties mean that they are a great thickener, often used in puddings like this mango and coconut one. So, using them in jam means that you won’t need a ton of sugar or pectin to get a good consistency, as many other recipes call for.
Although they are small, chia seeds have many great nutritional qualities. Just 2 tablespoons gives you 4 grams of protein and 11 grams of fiber. The seeds are also high in omega-3 fatty acids. Incorporated into your breakfast, they’ll keep you feeling full and energized until lunch.

Strawberry Chia Jam

Wash and cut the strawberries (you can cut them in big or small pieces, it depends on how chunky you like your jam) and place in a saucepan over medium high heat.
Stir/mash with a fork for 10-15 minutes or until they soften and break down. Stir in the lemon juice, honey and chia seeds.
Remove pan from heat and let sit for 5 minutes to let the jam thicken. Transfer to a jar or airtight container.
