A Sweet Way to Get Rid of Thanksgiving Leftovers

If your parents are like mine, then they must have thrown random Thanksgiving leftovers into your bag before you left for the last few weeks of school. They gave me TEN sweet potatoes to take back to my apartment (JACKPOT), and I had a blast. There are so many ways to use sweet potatoes, but making thick sweet potato “fries” is one of my favorite. 

So, if you’re doing everything in your power to avoid going grocery shopping these last two weeks, this is a perfect way to combine Thanksgiving leftovers and ingredients that you already have in your cupboard.  

Simple Sweet Potato Fries

    Wash and scrub the sweet potatoes.

    Cut potatoes into 1/2 inch thick slices.

    Place cut sweet potatoes onto a pan. Sprinkle olive oil, rosemary, and salt u0026 pepper on both sides of the potatoes. Bake at 350° for 40-45 minutes and flip halfway.

    Take the potato fries out of the oven and drizzle honey and candied pecans on top. Enjoy!
