10 Healthier Chicken Sausage Recipes Perfect for Busy Weeknights

This article is written by a student writer from the Spoon University at JWU Providence chapter.

People tend to feel intimidated when a new alternative to a traditional favorite is introduced to supermarkets shelves, added to restaurant dishes, and substituted in recipes. Case in point: chicken sausage. Regular sausage is perfect for biscuits and gravy, breakfast sandwiches, and more. So why mess with a good thing? You might want to give chicken sausage a chance, because it’s an awesome protein alternative that can be utilized in a variety of ways. Compared to the normal pork, chicken sausage is a much leaner protein that contains much less saturated fat than regular sausage. If you’re a sausage lover, shake things up a bit and give one of these chicken sausage recipes a try.

1. Chicken Sausage and Broccoli Zucchini Pasta with Parmesan

I am an immediate fan of anything that involves zucchini noodles. They’re a great basis to the meal, and they allow the chicken sausage to be the star of this dish. This recipe is composed of eight ingredients, and tossed in a bit of oil, cheese, and red pepper flakes, making it an overall fresh and light dish.

2. Sweet Potato Hash with Chicken Apple Sausage

This skillet is a comforting combination of ingredients. The richness of the egg yolks, sweet potatoes, and chicken sausage all pair so well together, and can be eaten really for any meal. This dish is also so much healthier compared to the normal “hash” containing pork sausage and regular potatoes.

3. Grilled Chicken Sausage with Shredded Kale, Apple, Hazelnut Salad

This recipe is extremely simple and truly highlights the chicken sausage. I really enjoy the richness of sausage paired next to a salad to balance it out; sometimes solely heavy ingredients in a dish is can be a bit much. This dish is fresh and light, but filling at the same time.

Spaghetti squash, similar to spiralized zucchini, acts as the “pasta” in this recipe. Combined with cheese and other “goodies,” this recipe is appealing to so many people; especially pasta lovers who are looking to enjoy a spaghetti dish, but cut down on the carbs.

6. Stuffed Bell Peppers

These peppers are poppin’ with flavor, color, and all around yumminess. I really love this recipe as it’s not only healthy, but also extremely satisfying. Variations can be made to this dish by utilizing different colored peppers, varying grains of rice, etc.

7. Grilled Chicken Sausage with Summer Vegetables

Talk about a summer dish right here! Utilizing the grill adds texture, flavor, and definition to food. This dish would be completely different if it were roasted or sautéed, for instance. This dish is awesome, as you’re truly able to see exactly what it is that’s being eaten—all natural vegetables and a protein.

8. Breakfast Avocado Toast with Chicken Sausage and Poached Egg

I’m sure I’m not the only one who has a weakness for avocado anything, particularly toast. This recipe reminds me of an inventive take on eggs Benedict with chicken sausage acting as the Canadian bacon and the avocado giving the creaminess that a traditional Hollandaise sauce would.

9. Chicken Sausage Cauliflower Fried Rice

Cauliflower rice does not get enough attention for how genuinely good it is. A few additional ingredients and cauliflower rice can be transformed into the absolute best thing you have ever had. This recipe adds all the fresh veggies, packed with some straight up chicken sausage goodness!
