Chicken and Sausage Gumbo

    Cut up the veggies and sausage. Set aside.

    Heat the oil in a sauce pan on medium heat. When it gets hot, slowly add in flour. Congrats—you made a roux!

    Continue stirring the oil roux until there are no lumps.

    Once the roux is the color of chocolate milk, add in the veggies and sausage. Mix all of these ingredients together.

    After letting the mixer simmer for about 5 minutes, pour in the chicken stock or broth.

    Bring this to a boil and then reduce the heat to a simmer. Stir occasionally for about an hour.

If your gumbo is too thick, you can add some water to it. The consistency should be thicker than soup but thinner than oatmeal.
