Kale is the superfood, providing your body with all kinds of ingredients that protect against cancer and encourage healthy bodily functions. Step 1: Set up your pan
The first step in making these eggs is to set up your pan. All you need is a small pan, just big enough to scramble eggs. Turn your burner on to a medium heat. Take a pad of butter and put it in your pan to melt. This will give your eggs great flavor and prevent them from sticking to the pan. If you do not have butter, cooking spray can also be used.
#SpoonTip: always make sure to cook your scrambled eggs on medium-low heat. If you cook them on high heat, the eggs will dry out and lose their ideal light, fluffy texture.
Step 2: Chop your vegetables
Next thing to do is chop your vegetables. Cut the peppers and onions into small chunks, then add them to your pan. There’s no specific amount you should chop; add as much or as little as you like – although the more veggies the more flavor and the healthier it becomes.
Step 3: Cook your veggies
Once your veggies are chopped, add them to your pan. Give them an occasional stir with a spatula. Cook them until the onions are slightly brown and the peppers have a slight char on them.
Step 4: Prepare the kale
Preparing the kale for this recipe takes an extra step than our peppers and onions. First, you’ll need to tear the kale into small pieces and put them in a small bowl. I usually tear up about one leaf of kale for this recipe, but you can do more or less depending on your preference. Don’t worry if one leaf seems like a lot of kale – it’ll cook down in the pan.
Next, take a little bit of olive oil and drizzle it over the kale. This should not be a lot of oil. Just two or three light drizzles over the top of the kale will do. Adding too much oil will make the eggs greasy and heavy, and we want them to be light and fluffy. Once you’ve drizzled the oil on, give the kale a quick toss with your hand to distribute the oil evenly over the pieces. The olive oil will give the veggies extra flavor and also act as extra non-sticking agent to the pan, as the butter will most likely be used up cooking the peppers and onions.
Finally, garnish the kale with some salt and pepper for added flavor that will elevate the flavor of the eggs in the end.
Step 5: Cook kale and add eggs
Now that the kale is prepped, add it to the pan. Cook it until it is cooked down (it will have a sort of wilted appearance) then add 2 eggs to the pan. I cracked them into the pan, but if you want to scramble them in a bowl beforehand that works just as well.
As soon as your eggs are in the pan, take your spatula and start scrambling. The more you scramble, the more air you incorporate into your eggs and the fluffier they will be, so scramble until they are done.
Everyone has a preference for how their eggs are cooked, but I usually cook mine until most of their shine is gone.
Step 6: Serve and enjoy!
Once the eggs are cooked, take them out of the pan and enjoy. This is a base recipe for my moderation of scrambled eggs, but you can definitely mix it up with other vegetables or add toppings like cheese or my personal favorite for eggs, hot sauce.
