These Hot Chocolate Cookies are Better Than the Real Thing

I’m not a huge beverage person, but hot chocolate is my jam. You wake up on a cold, winter morning to two feet of snow. You go outside and shovel your heart out, then come inside with frozen hands and a bright red face. In that moment, nothing tastes better than the sweet taste of hot chocolate. 

These cookies really do taste like the real thing. They have a brownie-like batter that’s refrigerated before baking so it comes out chewy and fudgy, but not flat. Then, they’re topped with a square of milk chocolate and half a marshmallow and toasted to perfection. Definitely enjoy these cookies while they’re still warm.

    In a medium, heatproof bowl, microwave the butter with the chocolate chips until melted. Add the brown sugar, eggs, and vanilla extract and mix well.

    Add the cocoa powder, flour, baking powder, and salt and mix with a rubber spatula until combined.

    Wrap dough in plastic wrap and refrigerate for one hour, or until firmer. While refrigerating, break up chocolate into pieces and halve the marshmallows. Preheat the oven to 350°F.

    Roll balls of dough and place on parchment-lined baking sheets. Bake in the preheated oven for 10 minutes, then remove from oven and push one chocolate piece into cookie and top with half a marshmallow. Place back in oven for 5 minutes.

    Allow to cool on baking sheet before removing to a wire rack to cool completely. Best served warm. Enjoy!

These cookies are relatively simple and they’re a lot of fun to make. Pressing a little square of chocolate into a soft freshly baked cookie is oh-so-satisfying. Plus of course, the end result is impressive-looking and delicious.
