Make St. Patty’s Day Even Better With These Minty Rainbow Cupcakes

Since St. Patty’s day falls right when spring begins to roll in, it’s the perfect time for baking. Open up a window, get out some ingredients, and whip up some of these fun rainbow cupcakes that pay homage to both the rainbow and to the sun.

    Preheat the oven to 350°F. To make the cupcakes, cream 2 sticks of butter and 2 cups of granulated sugar until light and fluffy.

    Add 4 eggs, 1 cup of buttermilk, 1 teaspoon salt, 2 1/2 teaspoons baking powder, 2 teaspoons vanilla extract, and 3 teaspoons mint extract. Incorporate thoroughly. Then slowly add the flour to the mixture before adding your desired amount of green food colouring. I recommend a spring green colour.

    Fill cupcake liners until they are about 2/3 of the way full. Bake for approximately 20 minutes. If you insert a toothpick and it comes out clean, they’re done.

    For the frosting, mix together 4 cups of powdered sugar, 2 sticks of butter, 2 teaspoons of vanilla, and 1 tablespoon of milk. If necessary, add a little more milk. Separate out a little of the frosting. Put blue food colouring in the larger portion until you reach your desired colour of blue. Put yellow food colouring in the smaller portion. Frost the cupcakes in blue, let rest briefly, and then draw a sun in yellow. Afterwards, cut the rainbow belts into shorter strips and position them like a rainbow on your cupcake. I was only able to acquire the bites, so I had to rest them up against each other.

The minty flavour of these rainbow cupcakes is both refreshing and invigorating. The bright colours will cheer up a person of any age and get everyone ready for spring. Eat some delicious cupcakes this St. Patrick’s Day and stay safe.
