The One Surprising Ingredient Your Muffins are Missing

So, what’s the secret to the perfect muffin, you ask? The answer is tahini. Yep, you heard us—that same, sesame-based ingredient that makes your hummus so addicting is exactly what’s about to take your next batch of muffins to a whole new level—trust us, we sampled them.

This secret ingredient comes from a new, ingenious company called Soom FoodsThey’ve got traditional tahini, a sesame chocolate spread (think Nutella, but better) and 4 different kinds of dips.

Side note: the dips taste great with Fritos or tortilla chips. The Spoon team loved all four flavors, but the winners were the Zesty Mediterranean and Curry flavors.

As for the muffins, Spoon GW put Soom’s tahini to the test and baked ourselves a batch of muffins from scratch. The results were astounding. We present the best, most moist (sorry we had to) muffins you’ll ever taste.  The greatest news of all? They can be considered “healthy”, since they’ve got apple, carrot and coconut in them.

Tahini Morning Harvest Muffins

Medium

Prep Time: 20 minutes
Cook Time: 15 minutes
Total Time: 1 hour

Servings: 24 muffins

Ingredients:
1 cup sugar
2 eggs, beaten
1/2 cup oil
1/4 cup Soom tahini
1 teaspoon vanilla extract
1 cup all-purpose flour
3/4 cup whole wheat flour
2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup buttermilk
3 cup shredded apple
2 cup grated carrot
1 cup shredded coconut

Directions:
1. Preheat the oven to 350˚F
2. Cream the sugar, eggs, oil, Soom tahini and vanilla extract

3. Sift together both flours, baking soda, salt, cinnamon and nutmeg
4. Gradually add the dry ingredients, alternating with the buttermilk

5. Stir in the apple, carrot and coconut
6. Pour into muffin tins, 3/4 of the way full

7. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean
