This Simple Granola Is Both Easy and Healthy

This article is written by a student writer from the Spoon University at GWU chapter.

I’ve been making this granola for so long, and I figured it might be time for me to share the recipe. This takes around 30 minutes in total to cook, but only about 10 minutes of prep. The end result is a perfect breakfast or a snack on the go. You can use it to top yogurt or eat it like cereal. It’s also super easy to personalize and adjust to your liking.

Instructions

  1. Preheat oven to 345°F.

  2. Kate Drapkin

Melt the coconut oil in a saucepan over low heat.

  3. Kate Drapkin

In a large bowl, mix together the melted coconut oil, maple syrup, oats, nuts, and pumpkin seeds.

  4. Kate Drapkin

Pour the mixture onto a baking tray. Make sure to spread out evenly and thinly across the tray. Bake for 15 minutes.

  5. Kate Drapkin

Remove the tray from the oven and now mix in the dried fruit and coconut chips. Bake for an additional 5 minutes, or until golden.

  6. Kate Drapkin

Remove the tray from the oven and allow the granola to cool. Once it’s cool, place it into an airtight container. Serve with milk, almond milk, yogurt, or on its own.
