I always find myself digging for new ideas to change up that boring Greek salad. Every Saturday for lunch, my mom and I look forward to our newest salad creation, we call it Salad Saturday Surprise.

Below are a few of our favorite concoctions that are healthy, colorful and tasty. Whether we are using up leftover salmon from dinner the night before or opening a can of white beans, we highly recommend that you get your creative juices flowing and feel inspired by our inventive salads.
