There’s nothing quite like being single during the holidays. From couples Instagramming their first Christmas together to your parents who won’t stop nagging you about wanting grandchildren, it’s hard to not feel bitter about your relationship status. But who has time to think about being single when you’re shoving chocolate down your throat? So here’s a list of five bittersweet chocolate recipes that match your temperament.

“Darker Than Your Soul” Dark Chocolate Cookies

  1. Preheat oven to 350°F. Using the microwave, melt 1 cup chocolate chips, stirring every 30 seconds.

  2. Using a mixer, beat egg whites until soft peaks form. Gradually add 1/2 cup powdered sugar. Beat on high until mixture is blended and resembles marshmallow creme.

  3. In a separate bowl whisk 1 1/2 cup powdered sugar, cocoa, cornstarch, and salt. Add dry mixture to meringue and beat on low speed.

  4. Stir in lukewarm chocolate and the rest of the chocolate chips. Portion out dough into 1 tablespoon sized balls. Pour 1/2 cup powdered sugar into a separate bowl. Dip dough in powdered sugar and place on baking sheet.

  5. Bake for 10 minutes, or until tops crack. Cool for 5 minutes or eat immediately. Whichever you prefer.

  1. Preheat oven to 350°F. In a microwave safe bowl, heat cream and caramels on HIGH for 30 second intervals, stirring after each interval. Continue until melted and smooth.

  2. In a mixing bowl, whisk flour, oats, brown sugar, baking soda and table salt. In a separate bowl, microwave butter until melted. Pour vanilla extract into melted butter then pour mixture over dry ingredients.

  3. Stir mixture with a fork until evenly coated then, in a buttered 8×8 inch baking dish, press half the oat mixture into the bottom of the dish.

  4. Bake in the oven for 10 minutes. Once baked, remove the dish and sprinkle both types of chocolate chips into an even layer over the cookie crust. Once evenly spread, pour caramel mixture over chocolate chip layer. Sprinkle sea salt on top of caramel layer then cover the top with the remaining oat mixture.

  5. Bake in oven for 15-20 minutes. Let cool completely on a wire rack before cutting and serving.

“Glad I Dumped Their Triflin’ Ass” Chai Chocolate Truffles

  1. Combine heavy cream and tea in a saucepan and place over medium-low heat, stirring occasionally. Let simmer for 8 minutes then turn off heat.

  2. Place chocolate and salt in a medium bowl. Pour the cream/tea mixture through a mesh strainer into the bowl of chocolate. Let sit for 3 minutes.

  3. After 3 minutes, slowly whisk the chocolate and cream together until smooth and blended. Once completed cover mixture with plastic wrap and refrigerate for 3 hours.

  4. Place cocoa powder in a small bowl. Pull out the ganache from the fridge and scoop out 1 oz balls. Roll balls in cocoa powder. Chill until ready to serve.
