Summertime is prime time for ice cream, especially since July is national ice cream month. You know you’re going to shamelessly buy absurd amounts of it, so why not make your own?
Making this galaxy ice cream is actually easy- and you don’t need an ice cream machine. An electric mixer, or a strong whisking arm, gets the job done for us. All you need is three ingredients for a classic vanilla, but why stop there? You can add in just about anything to recreate your favorite (even intricate) flavors.
Since rainbow food seems to be all the craze these days, here’s a beautiful, multicolored ice cream to help you be ~trendy~ and trippy. Although I used traditional food coloring and it came out great, I highly recommend using gel food coloring if you can find it. It creates a more vibrant color in the ice cream. I am also a strong advocate of sprinkles with ice cream, so use silver sprinkles to add to your space aesthetic.
Honestly, the hardest part about this ice cream recipe is waiting the 4 hours for it to freeze. Remember: opening the freezer 20 times to check to see if it is frozen, will prevent it from freezing.

In a large mixing bowl, use a hand or stand mixer to beat whipping cream on medium speed. This should be done until soft peaks form.
Once peaks form, mix in the condensed milk and vanilla.
Divide the ice cream batter into separate bowls, and add food coloring drops to each bowl.
Combine each color in a large container. Swirl with a spoon for âgalaxyâ effect. Freeze for at least 4 hours.
