Yesterday I had the strongest urge for some pumpkin bread – It’s just that time of year. Here in south Florida we do not get the fun weather changes and pretty leaves falling off the trees like some other states, but I am feeling a TINY drop in temperature which does it for me. So I ventured over to my local Target to pick up some ingredients and shockingly (not really though, because who is not in the mood to bake these days?) the little shelf in the baking isle that holds the canned pumpkin was ….. empty. I was so sad. My pumpkin bread dreams had been ruined for the day, so I let my imagination run free and instead came up with The Ultimate Fall Baking Bucket List for when that shelf gets restocked.
Pumpkin is a great addition to baked goods, as it adds such a delicious taste and keeps us feeling the fall season, but it also contains lots of nutrients and health benefits!! Pumpkin is super high in vitamin A which promotes healthy vision, immune support & growth. The key is to make sure you’re eating actual pumpkin, not chemically flavored pumpkin, which is why baking at home is (a little) better for you than buying store bought foods.
A classic. It’s like the banana bread of the fall. This can be served as a snack or even as breakfast. We love you pumpkin bread
2. White Chocolate Chip Pumpkin Cookies
White chocolate + pumpkin + cookies = a whole lotta love. I made a batch of these a few weeks ago, and while I typically am not a fan of white chocolate, these cookies stole my heart.
3. Chocolate Chip Pumpkin Scones
Scones are not something I bake too often, as they are time consuming. But every time I do, they do not disappoint. This recipe for chocolate chip pumpkin scones looks insane.
To use on bagels, as an add in for yogurt, or whatever else your heart desires.
This has been on my “please bake me” list for a minute now. What sounds more perfect than pumpkin AND cinnamon rolls? Nothing. Top these off with some fresh pumpkin spice butter and it’s over.
Again, Pumpkin Bread Pudding ….. Do I really need to say anything else?
Not a baked good, but still very necessary for the fall season.
