How to Turn Your Sweet Potatoes Into Sweet Potato Noodles

Sweet potatoes, another one of my food obsessions, are actually good for you. As if they couldn’t get any better, there is now such a thing as sweet potato noodles.

I spotted these super cool sweet potato noodles when I was at Whole Foods, and then the chef in me became determined to make them myself. In order to make these sweet potato noodles, you must have a special tool called a vegetable spiral tool on Amazon.

Simple and quick – olive oil, salt, and pepper is all the seasoning you really need on these noodles. They are really quite entertaining and amusing to eat, as you will see for yourself. You can twirl them on your fork just like spaghetti.

It’s your basic sweet potato but dressed to impress. Serve them as a side to a meal or add them on top of your salads. Whichever way you choose to indulge, you won’t leave your taste buds disappointed.

  1. Preheat oven to 350°F.

  2. Peel both sweet potatoes and cut off each end.

    Place the sweet potato in the spiral tool, and turn the handle.

    Place the spiral cut sweet potatoes on a non-stick baking sheet.

    Drizzle olive oil (or spray it) on top and add a few twists each, of sea salt and pepper.

    Pop in the oven and bake for 25-30 minutes.
