This Bacon Jam Is the Sweet and Salty Nectar of the Gods

Salty, meaty bacon cooks down with a sweet syrup to create an addictive spread you’ll want to slather on everything. Eat with crackers and cheese, spread on a bangin’ BLT sandwich, and definitely save some to give as a gift to all your bacon-crazed friends.

    Slice the bacon into small pieces and cook in a pan on medium heat until crispy, about 15 minutes.

    Dice the onion and peel the garlic.

    Pour off most of the bacon fat from the pan, leaving about a tablespoon. Add the onions, garlic, and thyme and cook until slightly caramelized, about 10 minutes.

    Add the syrup, sugar, coffee, and vinegar and cook on high for 5 minutes.

  5. Add the bacon and cook on medium-low for 2 hours. If you have a crock-pot, you can put this in for 4 hours on high.

    Strain off any liquid and place in a food processor or blender until the bacon becomes small. Let cool and enjoy.
