Everyone always buys a bunch of bananas, but no one ever eats them all before they get too ripe. I’m certainly guilty of eating one or two and then ending up with too many perfect, ripe bananas than I know what to do with. What else is there to make with them other than banana bread? Do you also happen to have oats lying around your pantry? How perfect. Two ingredient cookies…it’s possible, with just bananas and oats!
Banana bread can take a ton of ingredients, preparation, and time, and is such a hassle overall. A few weeks ago, instead of relying on my infamous banana bread recipe, I did a quick google search and came across the easiest recipe in the world. This amazing recipe gets rid of those extra bananas sitting out on the counter, just dying to be used up. I am going to be honest, I was thinking the same thing you were. This recipe seemed too good to be true. Who knew you could make cookies with just bananas and oats?
I had to try the recipe out for myself – and thank goodness I did. My life has been forever changed. Trust me, I have been dying to share these ooey-gooey treats with anyone who will listen. Believe me or not, two ingredients (with a few chocolate chips for guilty pleasure) can make the perfect (might I add, low calorie) cookie.
Now, how easy is it actually? I’ll take you step-by-step into the easiest mess you will ever make in your kitchen!
The Ingredients
Ingredient 1: Oats
Whole Foods Market Organic Quick Oats are my go-to when it comes to purchasing rolled oats, but you can grab any rolled or quick oats your heart desires!
Ingredient 2: Ripe Bananas
For this recipe, the ideal ripeness is when the banana is getting to be a little brown around the edges. Pictured above is what looks to be the best for a good mash in the bowl!
Though you can bake away with just these two star ingredients, feel free to sugar them up by adding some Lily’s Semi-Sweet Style Baking Chips for a sweeter treat. You can find these at your local grocery store as well – but any chocolate chips would work well for your sweet tooth.
The Preparation
Step 1.
Preheat the oven to 350 and lay a piece of parchment paper on a flat baking sheet.
Step 2.
Take two of the ripe bananas and mash them in a large mixing bowl. Add one and a half cups of the rolled oats into the bowl and mix them in very well with the mashed bananas.
Two ingredients. One amazing cookie in the works. 5 more minutes of prep and you can sit right by the oven and watch the goodness bake.
Step 3.
Add in as many chocolate chips as your heart desires. Then, spread out spoonfuls of the mixture onto the parchment paper with an inch or so in between each cookie.
Step 4.
Place the pan full of the yummy creation into the oven for a total of 11 minutes. And BAM! That’s all it takes! It couldn’t get any easier than that to create this yummy treat.
