Alright peeps, listen up.
Amy’s Kitchen is probably the best thing to ever happen to college students, in my opinion. You pop frozen, pre-prepared meals into the microwave for a few minutes and voila! A healthy, warm, homemade-tasting meal for you to enjoy. It’s a great way to cure homesickness for a little while.
One day, though, a terrible thing happened: my favorite Amy’s meal wasn’t available in our student market. *horror movie screams* I couldn’t stand for such a monstrosity, especially since I was really looking forward to it. And that lead me to create this SUPER easy recipe inspired by Amy’s Mexican Casserole.
DIY Amy’s Kitchen Inspired Mexican Bowl

Gather and prep all your ingredients. Here’s a neat little trick for dicing your onion perfectly. If you want to add meat, make sure it’s precooked before you add it into your mixture. I used this.
Cook your onions and sausage together in a pan over medium high heat. Cook until the onions reduce, about 10-12 minutes.
Add in the green bell pepper and cook for another 10 minutes.
Add in your rice, beans, and corn. I got this part of my recipe already cooked from my cafeteria, so I re-heated it for about 5-7 minutes.
Empty mixture into bowl. Crack your egg into the pan and cook over easy. (If you don’t know what that means, here. You’re welcome.)
Slide your egg on top of the rice and beans mixture. Add some Sriracha if you’re into that, and eat up.
