Everyone has that one dish that tastes like the “good old days.” Whether that be a home cooked meal or a childhood snack, we can all agree that food holds a certain type of nostalgia – one that cannot be replicated elsewhere. For me, it’s this banana bread. It’s sweet, satisfyingly dense flavor, even its aroma alone, brings me back to all the times my mother made it for me after a long, grueling day of elementary school. Now, this simple banana bread recipe is a go-to of mine. Whenever I want to replicate all the fond memories I’ve attached to it or if I’m just craving a sweet treat, I always bake this recipe.
It just so happens that this simple banana bread recipe is incredibly college kitchen friendly, requires minimal equipment, and comes together with just a few ingredients. Although this recipe’s nostalgia cannot be bought in the grocery store, the remaining ingredients are fairly simple and, chances are, you already have everything you need lying around!

Preheat oven to 350°. Grease a 9 x 5 non-stick loaf pan. If you use a different pan size, be sure to adjust the cook time accordingly. The general rule of thumb is the smaller the pan size, the less time it will need to cook.
Disclaimer: When I made this recipe, I used a 3 x 5 loaf pan, so I lessened the cook time to 25 minutes.
Whisk together wet ingredients (Bananas, egg, sugar, oil, vanilla.)
Tip: Instead of throwing away overly ripe bananas, freeze them, and use them later to make this recipe!
Slowly incorporate the remaining dry ingredients (flour, baking soda, baking powder, cinnamon) into the wet ingredients.
Pour batter into your loaf pan.
(Tip: to avoid chocolate chips / nuts sinking to the bottom of the pan, add them last)
Bake for 45-50 mins
Again, if using a smaller pan size, be sure to adjust the cook time accordingly.
Remove from pan immediately, serve, and enjoy!
