  1. Preheat your oven to 400°F.

    Cube your sweet potatoes and apples into bite-sized pieces. If you want, you can halve your Brussels sprouts. Roughly chop your garlic.

    Toss everything onto a sheet pan (or two, depending on the size) and coat with olive oil, salt, pepper, and dried thyme. Make sure you mix everything up so every bite is seasoned.

  4. Pop your sheet into the oven for 30 minutes, flipping the roast half way. Then, broil for an additional 10 minutes to crisp it up. And viola – the best fall side dish out there!
