This DIY Portillo’s Chocolate Cake Will Make You Miss Chicago

Whether you hate the word moist or not, you wouldn’t want to have a cake any other way. A soft, airy cake can be the perfect way to end the day, or even start it if you want.

There are the typical ingredients that bakers use to avoid making a cake with a texture similar to that of a rock. They includes eggs, vegetable oil, or sour cream. Unless you are extremely familiar with the Chicagoland famous Portillo’s Chocolate Cake, you may have been missing out on another ingredient.

That ingredient is mayonnaise.

The same exact mayo you slather on a sub or mix in a tuna salad will give your cake an airy, rich texture and taste. The best part is that you cannot even taste it.

    Beat all ingredients for 4 minutes, until combined and fluffy.

    Grease pans if necessary. Pour batter into prepared pans.

    Bake at 350°F for 30 minutes, or until you stick in a toothpick and it comes out clean.

    Let cool and top with frosting. Decorate with the optional Funfetti icing.
