How to Make Blueberry Ricotta and Raspberry Goat Cheese Grilled Cheese

The grilled cheese has got to be one of the simplest and quickest meals out there and rarely does it disappoint. But sometimes, you just got to get a little classy. These two recipes are grilled cheese sandwiches dressed to the nines, but with minimal added effort.

Blueberry Ricotta Grilled Cheese

Ingredients: 

Blueberries
Ricotta cheese (would also work with mozzarella)
Honey
Coconut oil (or butter)
2 slices sturdy bread (I used wheat sourdough)

Directions:

1. Spread coconut oil on the outside of both pieces of bread
Tip: If you don’t have coconut oil, butter also works.

2. Smear ricotta on the inside of one slice of bread.

3. Drizzle honey over ricotta.

4. Place desired amount of blueberries over the ricotta and honey.
Tip: This recipe could be enhanced by making a quick blueberry sauce using blueberries, sugar and lemon juice, in place of just blueberries

5. Cover with the second slice of bread and grill in a panini maker or on a grilling pan.
Tip: If grilling in a pan, it’s useful to press down with a spatula, and absolutely make sure to flip the sandwich over. Covering the pan with a lid for 30 seconds to a minute will help melt the cheese.

Raspberry Goat Cheese Grilled Cheese

Ingredients:

Raspberry jam
Goat cheese
Fresh basil
Coconut oil (or butter)
2 slices sturdy bread

Directions:

1. Spread coconut oil on the outside of both slices of bread.

2. Smear goat cheese on the inside of one slice of bread.

3. Spread raspberry jam on the inside of the second slice of bread
Tip: Strawberry jam would be just as great in this version, as would other fruit such as peaches or blueberries

4. Place a large leaf of basil (or 2-3 smaller leaves) on the 2 slices and put the halves together.

5. Grill in a panini maker or on a grilling pan
