Eat Veggies for Breakfast With These 4-Ingredient Sweet Potato Pancakes

Nothing beats waking up to delicious fluffy pancakes AND getting a full serving of veggies at the same time. Talk about killing two birds with one stone. These pancakes are not only tasty and easy, but you will also feel great after having them. They are high in fiber from the oats, high in protein from the eggs, and packed with vitamins from the sweet potatoes. So instead of making the classic banana pancakes (which are still delicious), try this recipe with sweet potatoes instead! (I promise it’s just as sweet.) My personal favourite is to top them with PB&J and fruit, but they’re great drowning in classic maple syrup too.

  1. Cut sweet potato in half, and microwave for 3 minutes until soft.

    Scrape the insides of the sweet potato into a bowl, and mash with a fork.

    Crack egg into the bowl and mix together.

    Add in oats, a pinch of cinnamon, and mix all together.

    Once batter is evenly mixed, pour batter onto a medium heated frying pan. Cook for about 4 minutes each side.
