Healthy Banana Oat Breakfast Cookies

When you’re in a time crunch, you may be inclined to grab a muffin or pastry at Starbucks to take with you to class or to just skip breakfast all together. Coupled with a tasty but caloric drink, you could be looking at a 900-calorie breakfast. These cookies, made with no butter or flour, will let you have dessert for breakfast but without the health consequences. Mix them up on Sunday, and you’ll have enough for the whole week.

Servings: 25 cookies

Ingredients:
2 cups oats
¾ teaspoon salt
2 teaspoons cinnamon
1 cup nut butter
2 ripe bananas
¼ cup honey or agave nectar
½ cup chopped nuts, chocolate chips or unsweetened coconut (optional)

Directions:

 1. Preheat oven to 350°F. Combine all ingredients in mixing bowl.

2. Spoon tablespoons of dough onto cookie sheet.
