These Roasted Brussels Sprouts and Chicken Sausage Can Be Made in One Pan

Ahh, yet another reason to take a trip to Trader Joe’s and wander the beautiful aisles of cookie butter and Bollywood popcorn. This recipe includes all of my favorite Trader Joe’s staples and is the reason I go there an embarrassing amount. This simple recipe comes together all in one pan with minimal effort, making it a go-to recipe for busy weeks. Once cooked, simply throw all the roasted ingredients in a bowl and eat.

The combination of savory sausage, salty artichokes, earthy Brussels sprouts, and nutty tahini makes it incredibly satisfying and equally healthy. Oh, and you gotta throw some hummus on there, because what’s a meal without a good spoonful or six?

Roasted Brussels Sprouts with Grilled Artichokes and Chicken Sausage

    Preheat the oven to 425°F. Microwave the Brussels sprouts in a large covered bowl for 4-5 minutes.

    While the sprouts are heating up, slice up two chicken sausages.

    Slice Brussels sprouts in half.

    Throw everything onto an aluminum foil-lined pan.

    Roast for 20-25 minutes.

    Add artichoke pieces to the pan and cook for another 5 minutes.
