14 Ways You Should Be Eating Avocado for Breakfast

Avocado is one of those foods that has gotten randomly trendy over the past couple years. The very fact that foods become trendy is still a strange concept to me, but regardless, this avocado obsession is actually one I can get behind. One of my favourite dorm room snacks is an avocado doused in pepper, and when the cafeteria serves guacamole it’s a straight-up holiday.

Luckily for me and my fellow avocado lovers, there are so many different ways to prepare this tasty superfruit. So, I share with you these creative ways to eat avocado for breakfast. Some are classics, some are new creations, and all are delicious.

1. The Classic: Avocado Toast

Some recipes are classics for a reason. They are quick, simple and above all else, delicious. Avocado toast is easily the most common avocado-based breakfast dish. However, there’s more to this recipe than mashing up some green fruit on toasted bread. Try topping the toast with ricotta, egg, or even grilled peach.

2. Baked Egg in an Avocado

For a different take on the egg and avocado combination, try combining the two right from the start of the cooking process. This breakfast has a total prep and cook time of about 25 minutes. Pretty good timing for a delicious and nutritious meal.

3. Vegan Avocado Smoothie

When I first read that title my taste buds became a little confused. Avocado is not something I imagine tasting particularly good blended up into a drinkable consistency. This recipe calls for only three ingredients, which makes me a little more inclined to try it out.

4.  Avocado Egg Salad

Add a new twist to this classic sandwich ingredient by infusing it with avocado. By mixing up eggs and avocado you are left with a sandwich filling that could be used for breakfast or lunch. The best part? It only takes about 20 minutes to mix up, and can be stored for a few days.

5. Avocado Brunch Ring

Now we’re talking. This recipe, although a little more time consuming, really spices up a breakfast classic. The combination of avocado, bacon, egg and cheese is heavenly. It’s the perfect meal for those lazy Sunday mornings, or whenever you’re feeling extra adventurous in the kitchen.

6. Avocado Chicken Salad

This recipe swaps mayonnaise for avocado in this classic chicken salad recipe. You can add in any extras you like, such as nuts or cranberries, to cater the dish to your taste buds. When spread on toast, this is a quick and easy breakfast essential.

7.  Turkey Avocado Panini

This sandwich is described as Cuban style and features cheese, turkey, and avocado on a toasted bun. It promises to have a crunchy exterior and warm flavourful inside. I think this is one recipe I could handle for every meal of the day.

8. Blueberry Avocado Smoothie

I know, this is the second smoothie on this list. But this one combines new flavours to give the smoothie a whole new style. After looking at these avocado smoothie recipes I think it’s a trend I can partake in. Apparently the avocado adds a creaminess that no other fruit can top.

9. Mini Bagel Breakfast Sliders

Everyone knows all foods taste better in miniature form, and a bagel sandwich (bagelwich) is no exception. By combining egg with practically any other ingredients you wish, this makes an incredibly versatile breakfast option. Adding avocado and salsa, as the recipe suggests, adds a Mexican twist.

10. Veggie Breakfast Burrito

The breakfast burrito just goes to prove any meal can be made into a breakfast dish if you try hard enough. Add eggs, sautéed vegetables, and fresh avocado into a tortilla to mix up your breakfast menu.

11. Avocado Grilled Cheese

Another Sandwich on this list, really? Yes, really. They’re a versatile and delicious meal option. This one adds a twist to the traditional grilled cheese by adding in red onion and avocado. To make it extra breakfast appropriate, add a fried egg between the grilled bread.

12. Egg White Bites

Pouring egg whites into a muffin tin is the first step of this ultra-easy breakfast. After that, add in some mushrooms, avocado, and spinach to add flavour and nutrients to the meal. The prep for this meal is easy, the cook time is the time consuming part. But with minimal effort and a little bit of oven patience, you can make a dish that looks straight out of a trendy Instagram.

13. BLT 2.0

Don’t question the amount of sandwiches on this list. Just accept it and drool over the pictures. The BLT is a favourite for many. Reinvent it by adding a fried egg and generous slices of avocado. This sandwich is quick, easy, and good for when you are on the go.

14. Avocado Breakfast Nachos

This is perhaps the most intriguing dish I came across. This recipe swaps traditional nacho ingredients for ones that are more breakfast friendly. Instead of tortilla chips, you use mini waffles. The waffles are then topped with bacon, eggs, avocado, cheese, tomatoes, and jalapeños. To be honest, this recipe kind of sounds like someone threw every breakfast item they had in the same pan and called it a meal. But hey, it looks good.
