This Pad Thai Recipe Will Make You Think Twice About Ordering Takeout

Pad Thai is one of my absolute favorite dishes to get when I order takeout. After ordering it for the thousandth time, I thought: why can’t I make this myself? So I went searching for recipes and I stumbled upon this one from Delish. With a few tweaks in the sauce, oil and amount of vegetables, I fine-tuned the recipe and came up with this:

    Cook your noodles per the package instructions. I used Lotus Foods Brown Pad Thai Rice Noodles and cooked them for 5 minutes in salted boiling water. Drain.

    While your noodles are cooking, whisk together the lime juice, honey, soy sauce, and red pepper flakes. Set aside for later.

    Heat oil over medium-high heat. Add vegetables and cook for about 5 minutes, stirring often. Stir in garlic and cook for one more minute.

    Add your protein and season with salt and pepper. Cook until cooked through.

    Move vegetables and protein to one side of the pan and pour your whisked eggs into the other side. Scramble eggs until set, then mix in with the veggies and protein.
