Whether you’re a fan of oatmeal raisin cookies or cranberry oatmeal, these can be adapted both ways. They’re chewy and decadent with a pop of sweet and tart from yogurt-covered craisins.
I bought these yogurt-covered craisins to snack on, but it hit me, these would be amazing in an oatmeal cookie. Truthfully, this was my first experience baking them, and I adapted a regular oatmeal yogurt-covered raisin recipe.
Chewy Yogurt Covered Craisin Oatmeal Cookies

Preheat oven to 350ºF and line baking sheet with parchment paper.
In a large bowl, whisk together flour, baking powder, and salt.
In a different bowl, use an electric mixer to beat the butter until it becomes soft and fluffy.
Add brown sugar to butter and mix until combined.
Beat in the egg and vanilla extract.
Switch to a rubber spatula to fold in oats and yogurt-covered craisins.
Scoop the dough out with a spoon and place with at least 2u0022 of room. Press down the dough gently.
Bake the cookies for 13-15 minutes, checking to see when they look golden around the edges.
I’m a fan of chewy cookies, so I swapped the entire cup for brown sugar. Of course, the essential change was the yogurt-covered craisins. All in all I impressed myself, they’re a must try.
