Easy Pumpkin Spice Mug Cake

This article is written by a student writer from the Spoon University at BC chapter.

Fall has officially begun and with it has begun the mass influx of everything pumpkin spice. As the weather has started to cool off, I’ve been looking for the perfect warm treat to eat. I created this super easy pumpkin spice mug cake recipe that anyone can make using a microwave in their dorm!

The end result tastes awesome on its own, but adding a scoop of your favorite vanilla ice cream adds a whole new dimension.

Instructions

  1. Annie Taylor

Combine all of the dry ingredients in your mug.

  2. Annie Taylor

    Add in the pumpkin puree.

  3. Annie Taylor

Add in the water to your mix.

  4. Annie Taylor

Stir with either a spoon or fork. Make sure you combine the ingredients well, otherwise the dry ingredients may get left unincorporated in the bottom of your mug.

  5. Annie Taylor

Place your mug in the microwave. I recommend putting a paper towel under your mug so that you can use it to remove the hot mug from the microwave, as well as ensure that your microwave stays clean.

  6. Cook your mug cake for 1 minute.

  7. Let the mug cake rest in the microwave for 30 seconds before cooking it for the second minute.

  8. Cook your cake for 1 minute again.

Once your cake is fully baked feel free to enjoy as is or add a scoop of ice cream on top!
