Forget the Lärabars and Make These Vegan Nut Bars Instead

Do you ever find yourself needing to bring a quick dessert while having very limited time and ingredients? These crowd-pleasing bars are my go to-snack whenever I need to fuel for a workout or am craving something sweet. Originally, this recipe was for nut balls, but pressing them into bars is much easier. 

All you need is a food processor, toasted nuts, coconut flakes, and dates (all other ingredients are optional). I’ve used toasted pecans in this recipe, but walnuts, cashews, or almonds would also work wonderfully here. As a bonus, these nut bars are vegan, gluten-free, and contain no added sugar.

    Put pecans, dates, coconut flakes, oats, salt, and chia seeds into a food processor.

    Process for about 2-3 minutes or until crumbling at the sides.

    Press mixture into a pan in an even layer and put the pan in the freezer for about 10 minutes.

    While the bars are cooling, melt the chocolate in the microwave. Melt for about 1 minute and 30 seconds, stopping at 20 second intervals to stir.

    Take pan out of freezer and drizzle the melted chocolate over the top. Put back in freezer for another 10-15 minutes.
