Being dairy-free has so many positives that it is hard to find negatives, but then it hit me: BRUNCH. What would a Sunday brunch in the apartment look like without pancakes to serve as the main course? Very, very sad is what it would look like, in case anyone didn’t think that. So it got me thinking, I’m not the only one who feels that way so I need find a recipe that will allow me to have my (pan)cake and eat it too. These two-ingredient banana pancakes are easy to make and come together in just 15 minutes.

Preheat griddle to 325ºF and spray it with non-stick spray.
In a mixing bowl, peel the two bananas, break them into pieces and add in the two eggs. Mash them up into a custard-like texture with a few little chunks left in there.
Once the griddle is heated, put those cakes to the burner and start flipping! Keep them small, as their consistency makes it hard to flip.
To add some extra flavor and color, add strawberries, almonds, and/or syrup to make these little pancakes pop.
