After the first few weeks of the rebellious joy of being able to eat whatever you want whenever you want, the smell of Subway becomes a little sickening and you’re ready to have some real food. With fall in full blast, what better way to get rid of your dining hall blues than to get in the spirit with this pumpkin ravioli with apple cider sauce? Honestly, it’s fall in a bowl! You’ll find yourself FALLing for this recipe more and more with every bite.

Fall in a bowl: The pasta recipe you need this season

    To make the ravioli,

    Mix flour and salt in a large bowl

    Make a dent in the flour and add the wet ingredients (olive oil, water) and the eggs

    Beat the eggs and slowly mix in flour until a dough ball forms

    Using a floured surface, knead the dough until it becomes easy to work with

    Roll out the dough thinly using a rolling pin or pasta maker, then cut it into circles using a large cup or cookie cutter

    Mix the canned pumpkin with a tablespoon of brown sugar and add pumpkin spice

    Put a small amount of the pumpkin mixture in the center of a circle of pasta, wet the rim of the circle with water and place another pasta circle on top, pinching the edges to close the ravioli. Repeat this process with the rest of the pasta

    Once all the ravioli are made, boil them in water for three minutes

    To make the applesauce,

    Boil the apple cider in a pan until it begins to thicken

    Meanwhile, heat the butter with a tablespoon of brown sugar and the sliced apple in a large pan until the apples are softened

    once the apples are softened, add in the apple cider and continue to reduce until a syrup is formed, then take the sauce off of the heat

    Lastly, add the sauce to the pasta and enjoy your meal!
