It’s hard enough to find the time and energy to make food for yourself, let alone incorporate vegetables into the dish… But this recipe solves both of those problems. How? Microwave + leftover veggies = time/energy saved and a healthy meal. This recipe is pretty similar to regular omelets, but it replaces pan frying — the most stressful part, if you ask me — with the beloved microwave. No fussing with your cheap stove, no worrying about burning your omelet, and no additional dishes to clean — sounds good to me.

So open up your fridge and reach around for that broccoli or spinach that your mom convinced you to buy, cut them up and place them in your omelet. Once you toss some cheese over those veggies, it’ll be like they aren’t even there.

Now that the prep is over, just place it in the microwave and press that 2 minute button — and voila, you’ve got a Top Chef-worthy omelet.

    Ingredients

  • 2 eggs
  • 2 tablespoon water
  • Shredded cheese
  • Salt
  • Pepper
  • Chopped veggies
  • Pam Spray or melted butter
  • Plastic wrap

    Take any and all leftover vegetables from your fridge and finely cut them up. Set them aside.

    Crack eggs into mixing bowl.

    Add salt and pepper to taste.

    Mix together until all ingredients are combined.

    Spray Pam or pour melted butter on microwave-safe plate.

    Microwave on high for a total of 2 minutes, stopping every 30 seconds to rotate plate 1/4 turn.
