Vegan Whole Wheat Onion Caraway Quick Bread Recipe

Have you ever tried cooking with beer? This was one of my first experiments making a beer-leavened bread recipe. I used Corona (mainly because I knew it was vegan and it was what my parents had in their fridge at the time), but you can also add a heartier stout to impart a different flavor. For a list of vegan beers, look here. If you would prefer to use a non-alcoholic option, you can also substitute an equal amount of seltzer water. 

I really like how simple this recipe was to make. It was prepared in under five minutes and quickly in the oven. I recommend serving it as a savory snack or as an appetizer. 

Vegan Whole Wheat Onion Caraway Bread

Ingredients
  • 3 cups whole wheat flour
  • 1 tbsp. baking powder
  • 1 1/4 tsp. sea salt
  • 2 tbsp. caraway seeds
  • 2 tbsp. onion powder
  • 2 tbsp cornstarch
  • 1 1/2 cups vegan beer; you may need a little extra if dough is too dry
  • 2 tbsp. neutral-flavor oil
  • 1/4 roasted salted pepitas for garnish

Step 1

Preheat oven to 350° F. Spray 8"x4" loaf pan with non-stick cooking spray. Add all dry ingredients and spices to a large mixing bowl. Stir to combine.

Step 2

Add beer and oil to dry ingredients. Mix until combined, gradually adding more beer if necessary.

Step 3

Transfer into loaf pan and garnish with pepitas. Bake for 50 minutes or until a toothpick comes out clean.
