Quick and Easy Veggie-Filled Pasta Salad

This veggie-filled pasta salad is delicious during any season, whether it's for a summer picnic or a quick dinner on a cold winter night. It's super easy to prepare and can be made with a variety of different vegetables, especially those that are in season. So gather up the #freshest veggies you can find and your favorite pasta for a satisfying dish that'll be ready to devour in no time.

Ingredients
  • 1 box pasta
  • 2 carrots
  • 1 container roma tomatoes
  • 1 cucumber
  • 1 bell pepper
  • Salt
  • Pepper
  • Olive oil
  • Pesto

Step 1

Bring 4 cups of water to a boil. Place 1 box of your favorite pasta in the water and reduce the heat. Drain the noodles in a strainer. My favorite is farfalle or penne!

Step 2

Peel only the outside skin of 2 carrots, and discard. Continue to peel the entirety of the carrots into your dish. These strands may be long, so feel free to cut them in half with a sharp knife.

Step 3

Peel one cucumber of its skin, then slice it into wheels. Continue to cut each wheel into quarters.

Step 4

Slice each of the tomatoes in half.

Dice the bell pepper into pieces, no bigger than your thumb.

Step 6

Combine vegetables and mix in the salt, pepper, olive oil, and pesto. Drain pasta and serve with dressed veggies and shredded cheese, if desired.
