Veggie-Centric Eats For Super Bowl Sunday

Super Bowl LIII is just around the corner, which means one thing and one thing only: we have one last tailgate party to plan for this football season. With Maroon 5 headlining the halftime show with Travis Scott and Big Boi, you know that the entertainment will be top-notch, so it's important that the food at your upcoming tailgate party be equally as hype. Try out these veggie-centric Super Bowl snacks; they are the ultimate twist to tailgate favorites that will add tons of color and taste to your snack table.

Cauliflower Nachos

  • Prep Time: 15 mins
  • Cook Time: 45 mins
  • Total Time: 1 hr
  • Servings: 6
Ingredients
  • 1 large head cauliflower - chopped into small pieces or florets
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 medium red bell pepper finely chopped
  • 1 cup chopped green onions
  • 2 tablespoons cilantro
  • 2 plum tomatoes diced
  • 1/2 red onion diced
  • Sliced jalapenos optional - use as many or as few as you like

Step 1

Preheat the oven to 425 F. Take your cut-up cauliflower and toss it on a baking sheet. Make sure the florets are spread out evenly. Drizzle the cauliflower with a little olive oil, and season it with kosher salt and a little black pepper. Roast this in the oven for 30 min.

Once your cauliflower is done roasting you want to begin to create your nachos. First, sprinkle your cheddar and Monterey jack cheeses evenly over all of your cauliflower. Then you want to add your tomatoes and red peppers over the cheese. Then you want to garnish with your chopped green onions, cilantro and red onion. If you are adding jalapenos you want to throw them on top of all of the other ingredients.

Bake the nachos at 400 F for about 10 minutes. Depending on how crispy you want your nachos, you may want to cook them for about 12 minutes if you want the extra crisp.

You can serve your nachos with salsa, sour cream and guacamole for an awesome dish!

Cinnamon Sweet Potato Fries

  • Prep Time: 15 mins
  • Cook Time: 30 mins
  • Total Time: 45 mins

Ingredients
  • 2 large sweet potatoes
  • 3 tablespoons vegetable oil
  • 1 teaspoon sea salt
  • 1 cup brown sugar
  • Cinnamon - the amount you use is your choice

Step 1

Preheat the oven to 425 F. Spray a baking sheet with non-stick spray.

Peel and cut your sweet potatoes into “finger length” strips of about medium thickness. Toss your strips into a bowl and toss with the oil and sea salt.

Spread out the potatoes onto your baking sheet into a single layer. Sprinkle the brown sugar across the layer of potatoes. Then sprinkle your potatoes with as much cinnamon as you wish. I would recommend a generous layer…. It makes them taste absolutely delicious and there is nothing wrong with a little extra cinnamon!

Bake until tender and the brown sugar and cinnamon are bubbling on top of the potatoes. The cooking time is between 18 - 24 minutes depending on the thickness of your potatoes. Just watch them. Make sure to cool the fries before serving.

Dill Dip

Ingredients
  • 1 cup plain non-fat Greek yogurt
  • 1/2 teaspoon dried dill
  • Fresh chopped chives - just a few!
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder

All you have to do is pour everything into a bowl and mix it together. Serve the dip with carrots, celery, cucumbers and some plain pita chips for a crowd-pleasing snack!
