There is perhaps no better way to start a Sunday than with some yummy baked goods, a warm cup of coffee, and good company. Today, I made these delicious vegan & gluten-free morning glory muffins to share with my family! They are made with oat flour- which is simply just ground oats, and some other pantry ingredients that I gathered together. This recipe is also refined-sugar free and sweetened using maple syrup. 

You can include your favorite additions to this recipe like nuts, seeds, chocolate chips, and maybe even some dried fruit! I like eating these muffins with a little bit of peanut butter on them, but they can also be enjoyed straight from oven.

    Ingredients

  • 2 ripe bananas
  • 1/2 cup almond milk
  • 1 1/2 cup oat flour
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tbsp. baking powder
  • 1 tsp. salt
  • 2 tsp. Vermont Maple Syrup
  • 1/2 cup walnuts

  • Step 1

    Prepare oat flour in blender by blending whole-grain, rolled oats until flour forms.

    Pour oat flour into separate bowl and combine with cinnamon, nutmeg, baking powder, and salt.

    Blend together bananas and almond milk until smooth. Pour into bowl with dry ingredients and stir until combined. Then add maple syrup. If your bananas are more on the ripe side, you may not need to add maple syrup (so feel free to taste and add accordingly).

    Add walnuts or any other special additions to the batter.

    Pour into lined muffin-tin. Bake in oven at 425° for 14 minutes, or until a toothpick comes out clean.
