Yes, it is true, you only need two ingredients to make these cookies. The rest depends on your taste, but with gluten-free oatmeal and bananas you are ready to go.
Cookies are one of the world’s sweetest snacks of all times, but sadly for gluten-intolerant people, they are a forbidden pleasure. I know, I know there are lots of brands selling gluten-free cookies…but where does the excitement of baking your own go?
When I found out I was gluten-intolerant it was a very, very depressing day, but I switched my mindset pretty fast and started looking for other alternative options. Finding gluten-free oatmeal at the supermarket was easier than I thought, and therefore I immediately came home and prepared my all time favorite, easy banana cookies.
As I said before, you only need these two ingredients for the base, and they are already good that way, but we all like a little extra sweetness, don’t we? I’ll share with you my extra ingredients, but you can use whichever you like.
Gluten-Free Oatmeal Banana Cookies

Smash the banana/s. Doing it with your hands can serve as an extra stress reliever!
Add the gluten-free oatmeal and mix well.
Add cinnamon and vanilla extract to taste (vanilla extract is strong, 1 1/2 teaspoons are more than enough).
Form little balls with the mix and place them on parchment paper as shown in the picture.
Bake for 20 to 25 minutes, they will be mushy when you take them out of the oven but remove the parchment paper from the baking pan and place them on the table for them to cool off. Wait 5 minutes and remove each cookie carefully.
Add some honey, spare some cocoa, sprinkle some grated coconut, add some other fruits, options are infinite!
Spoiler alert: gluten-free oatmeal feels lighter than the average one, so by the time you realize this, you will have eat them all. Be careful and remember your friends would like them too!
