This Chia Seed Pudding Tastes Exactly Like an Orange Creamsicle

Whether you’re looking for a cool, creamy way to start your day, or simply a new snack to add to your rotation, look no further than this ceamsicle chia seed pdding. Chia seeds are not only full of protein, fiber, and omega-3s, but when combined with a liquid (like vanilla soy milk), they magically congeal into a tapioca-like pudding — all you have to do is let it sit in the fridge.

To mix up the chia seed pudding game, this recipe calls for orange juice and vanilla non-dairy milk (suggested: vanilla soy milk). Spooning this into your mouth is just like slurping on a creamiscle, but without the drippy mess… and with about a million times the nutritional value.

Gluten free and vegan, this pudding is sure to become a fast favorite.

Creamsicle Chia Seed Pudding

  • Cook Time: At least 2 hours (to set)

Ingredients
  • 2/3 cup chia seeds
  • 1 cup vanilla soy milk (can substitute almond, coconut or rice milk)
  • 1 cup orange juice
  • 1-2 tablespoon sweetener of choice (sugar, agave, maple syrup)

Step 1

Place chia seeds, soy milk, orange juice, vanilla extract, and sweetener in a bowl. Mix well to combine.

 

Step 2

Pour into individual glasses, cover, and allow to thicken in the refrigerator overnight, or for at least 2 hours.

Step 3

Top with additional sweetener, fruit, and/or coconut whipped cream, if desired.
